Sexy Low Carb Pad Thai
Ingredients
1 can palmini linguine (you can also use zoodles or brown rice noodles)
1/2 chopped red bell pepper
1/2 chopped sweet potato
1 egg (or tofu/tempeh for vegan version)
1 nori sheet
1/2 cup kale
2 tsp of sriracha
2 tsp coconut aminos
1 tbsp soy-free teriyaki sauce
crushed peanuts/walnuts for garnish
cilantro for garnish
lime or lemon for garnish
Directions
Heat a non-stick pan with coconut oil and sesame oil. Add chopped sweet potato and red bell pepper to the pain and simmer on medium heat. Scramble one egg on the other side of the pan while veggies cook, and mix together once scrambled. Add kale and chopped nori for extra greens and minerals. When greens are soft but not droopy, add noodles of choice to the pan and mix. Add sriracha, coconut aminos, and teriyaki sauce and stir until sauce is evenly distributed. Serve with crushed nuts, cilantro, and a lemon or lime wedge for garnish.
